Food What's For Dinner Tonight?

    It's a traditional American southern dish traditionally prepared on New Year's Day
    for good luck. Basic ingredients are ham/ham hock, black eyed peas, collard greens, onions, celery, garlic.

    We baked a ham this morning, mixed up some extra glaze. Used some of the ham in the Vagabond Baked Beans we cooked this afternoon. Had both for dinner with some fresh rolls.

    For breakfast I had 3 chops of entrecote and to go with that carrots and celery, which by complete accident I cooked to a perfect consistence and the taste was fantastic. Aromas flourished. For the evening though, I'll probably have nothing.

    Rice, two stir-fry dishes, spicy cashew chicken, and garden veggies. The veggie recipe needs some tweaking, namely reducing the amount of veggies. The folks who wrote it must've used really small veggies.

    And of course the image is too large to load.

    Yellow pea soup with onion, carrots, parsnips, and ham. Simply seasoned with thyme and rosemary. Rye crackers and Havarti cheese. And the most divine seedless red grapes! Perfectly sweet, tight skinned and juicy. From Peru, and only $2.49lb. Hard to find good grapes this time of year.:)

    I can't believe I'm waxing enthusiastic about grapes.:rolleyes:

    My wife wanted to try something different. She found a beef stroganoff recipe, slow cooked it in the Instant Pot. Served over egg noodles.

    I suggested we do a veggie that would contrast with the 'sour' stroganoff; the ginger glazed carrots were an excellent choice.

    I made paleo curried meat pies from scratch. Cassava flour crust is a bitch to work with. But, I did it! And we ate almost the entire half batch. We're going to get fat if I keep making this stuff. [​IMG][​IMG]

    I'm going to be out of commission for a few days. So I'm cooking a lot tonight.

    --Instant Pot Mediterranean chicken thighs
    -- two variations of briami
    --mini-meatloaves
    --leftover Instant Pot pulled chicken in homemade barbecue sauce (with local chopped hot giardiniera)
    --basmati rice
    -- Legit Bread Company blonde sandwich bread (I baked it yesterday)
    --quinoa

    All paleo (or mostly, given the rice and quinoa), all homemade. I am in love with my Instant Pot. And the Legit Bread Company... I made pancakes this morning and didn't get sick!
