Food What's For Dinner Tonight?

    The best cure for the worst hangovers is red sauce. So I made a huge pot of red sauce packed with veggies and meat that I served over flat sweet potato starch noodles. I've been experimenting with a few different things... This batch came from two big ass cans of fire-roasted tomatoes (Muir Glen organic are delicious), a box of Pomi strained tomatoes added to sautéed onion, leek, yellow pepper, carrots, and celery. Halfway through, I hit it with the immersion blender and then added sautéed mushrooms, fresh basil, three Parmesan rind pieces, a pound of ground beef and two hot Italian sausages. Simmered for a total of two hours.
    Made tomorrow night's dinner, too. Sautéed six types of mushrooms, onion, leek, yellow pepper, carrots, celery, garlic (sense a pattern?), and baby bok choy in coconut aminos, tamari, a crapload of spices, and toasted sesame oil. Added home made broth from awhile back and simmered for an hour. Added the greens of the baby bok choy, and added 1.25lbs of ground beef that I undercooked with onion, spices, and six thai birds eye chiles when there was just 20m left. It keeps the meat from overcooking. Played with flavor balance and dinner's done for a few nights. There's always rice in the fridge and sweet potato starch or rice noodles that can be made. I'm tired now. But the house smells good.

    An Indian style curry made with onion, garlic, ginger root, coconut milk, cubed tofu and green peas. We were out of rice, so I used couscous, which turned out fine. One of our rare completely vegetarian meals.:)

    Last night...

    Pinto beans. Rinsed, soaked nearly 24 hours, rinsed again. I flavored them with onions, bacon, cumin, garlic, & salt. The beans were very fresh, purchased loose at Fiesta. There is a noticeable difference between the bagged beans on the shelf (which can be reasonably fresh) and fresh beans.

    My wife cooked from-scratch cornbread, which also turned out exceptionally well.

    If you ever drive out from the city to hike at Starved Rock, there is actually a good hole-in-the-wall Cajun place out there. The guy is from LA and still sources all his stuff fresh from down there.

    Menu

    They are closed Mon-Wed (I've been told he uses those days to drive a truck down to meet his LA food supplier every week) and have short hours on Sunday, but it's good stuff. In the summer the wait can be an hour or more, the place is packed. But it's worth it. Between that and Starved Rock it'd be worth a day trip for you some time.
