Whenever I hit a plateau, I throw in something different. Usually doing my max for 3 sets of 2's with some help from my spotter will do it for me. If I want to raise my bench max, I'll do a blitz which is benchpress only with my regular workout weight but do twice as many sets over a longer period of time. I wouldn't do any other chest exercises with that though. It'll shock your muscles hardcore.
