The fast food retaurants are reacting to market forces (as any good capitalist should do). It is currently in their interest to offer healthy options. Noone that I am aware of is holding a gun to the head of the McDonald's Corp. and noone is holding a gun to the heads of the people making the healthy choice...
The word here is choice and McDonald's made a choice to offer choice.
