They used to do this. I know first hand, being a cook at a shelter in Ottawa. I used to serve KFC every Saturday.
Apparently, now they use their leftover chicken for a chicken salad or something.
Think about that for a second. If you order a KFC chicken salad, you're getting recycled chicken that would have been given away for free (or maybe a tax credit).
Tim Horton's used to give us day-old stuff too. I haven't gotten any answers as to why they don't anymore though.
