Somebody on another forum provided the following list and it's pretty much perfect. Exactly the type of songs I was looking for:

David Gray - Sail Away With Me
REO Speedwagon - Can't Fight This Feeling
Guns N Roses - November Rain
Live - Dolphin's Cry
Seal - Kiss From A Rose
I've never heard Kiss From a Rose, Dolphin's Cry, Always and Sail Away With Me, but they ended up being great.
