Well I know that there is some more background for Boromir and Faramir when they are in Minas Tirith. There are more Ent scenes. The part from the book about Merry and Pippin finding the food storage place when Isengard has been flooded is in there. Also, if you've played The Two Towers video game, the scene where Aragorn and Gandalf are talking at the end about how Sauron fears the Heir of Isildur is in there, I don't remember any more.
