Spaghetti Sauce for 4

Ingredients:
1 Large Yellow (Vidalia) Onion - Diced
3-5 Large gloves of garlic - Minced (Use as much garlic as you want)
1 cup of Celery - Diced
1 medium carrot - Diced
1 Red Pepper - Diced
1-2 lbs of Italian Sausage - you can use ground or links.
(I like to mix Sweet and Medium to hot sausage.)
- You can also use a mix of meats like veal or pork neck bone
1 8 oz can of Tomato Sauce
1 6 oz can of Tomato Paste
1 14 oz can of Diced Tomatoes
Olive oil

Spices you will need:
Oregano, Italian Seasoning, Basil, Bay Leafs, Pepper, Salt (optional),
Sweet Hungarian Paprika (optional), Parsely (Optional)

Steps:

1. In large saucepot put in Olive oil and brown the sausage over medium heat.
2. Once the sausage is browned remove it from the pot.
3. Add all your vegetables and garlic to the pot and 1 tablespoon each of Oregano, Italian
seasoning, Basil, Pepper, and 1 bay leaf.
4. Cook the vegetables over medium heat until soft. Usually about 10-15 minutes. Stirring occasionally
5. Once vegetables are soften add the meat, tomato sauce, tomato paste and diced tomatoes to pot.
6. Stir. Add optional 1 Tbsp paprika if you would like. If the sausage you got ends up being too spicy
you can use sweet paprika to tame it a little bit.
At this point you can also add a cup of wine or chicken stock if you want.
6. Bring to a boil and then reduce heat to low and simmer for AT LEAST 5-6 hours.
Make sure it is low, but still simmering. You don't want to burn the bottom. Also, if you want a
thicker sauce leave the lid off, if you want a thinner sauce leave the lid on.
7. 1.5 hours before serving remove the sauce from heat and re-add 1 Tablespoon of Oregano, Italian
Seasoning and Basil. Let stand off heat for an hour then reheat 30 minutes before serving.
8. Cook your pasta noodles al-dente
9. VERY IMPORTANT: After noodles are done and rinsed under water, readd to the pot you cooked the noodles
in and add 1 cup of the sauce to the noodles over low heat and stir until noodles are coated. Let stand
for 5 minutes.
10. Serve pasta with sauce (make sure the sauce is heated up) over it.

seriously try adding some cayenne pepper, butter, and worchestershire sauce along with two bay leaves...

I didn't :( I was lazy and made chicken parm instead.
