Recipe Crock Pot/Slow Cooker recipes?

    It's getting to be close to fall (scary!), and that seems to be a good time to fire up the crock pot for various things. What do you do in the crock pot?

    We don't often cook in the crock pot, but when we do it's usually various forms of roast or chicken. One of my favorites is a recipe my wife came up with. You take a chuck roast and season it liberally with whatever seasonings you like on tacos (cumin, various peppers, etc.), add in kidney beans and cook on medium all day. Shred the beef when it's done. Serve it over corn chips, or in tortillas. Top with guacamole, sour cream, cheese, diced onions, tomatoes, or whatever else you enjoy on Mexican food. :cool:

    Ingredients

    • 1 pound mild pork sausage
    • 1 (15 ounce) can wax beans, drained
    • 1 (15 ounce) can cut green beans, drained
    • 1 (15 ounce) can lima beans, drained
    • 1 (15 ounce) can black beans, drained
    • 1/2 (28 ounce) can barbeque baked beans, with liquid
    • 1 (15 ounce) can chili beans, with liquid
    • 1 (6 ounce) can tomato paste
    • 1 cup packed light brown sugar
    • 1/4 cup barbeque sauce
    • 1 small green bell pepper, diced
    • 1 small yellow onion, diced
    • 1 teaspoon fennel seed


    Directions

    1. Place sausage in a skillet over medium heat, and cook until evenly brown. Drain grease, and transfer sausage to a slow cooker.
    2. Into the slow cooker with the sausage, mix wax beans, green beans, lima beans, and black beans. Mix in baked beans with liquid and chili beans with liquid. Stir in the tomato paste, brown sugar, barbeque sauce, green bell pepper, onion, and fennel seed.
    3. Cover slow cooker. Cook on Low at least 5 hours.

    Roasted beets.

    Yeah, it isn't really a recipe, but it works so much better than any other way of roasting beets.

    Wrap 'em in tin foil in equal sized bunches. Cook. Put on disposable gloves. Peel outer skin off of beets while wearing gloves. Eat.

    handful of slivered almonds

    Let it warm up and then enjoy

    Probably not what you were looking for, but it's pretty damned good on a cool evening especially paired with the right foods, like a pork roast.

    Basic Beef Stroganoff

    2 lbs beef (use a lesser grade beef if you don't want it to disintegrate)
    1 chopped white onion
    1 clove minced garlic
    2 cans beef stock
    seaons to taste

    Cook low for 8 hours.

    Drain slightly if desired. Stir in 2 x 8 oz containers of onion and chive cream cheese. Serve over egg noodles.

    Since it is going to be colder soon... this is a great beef stew recipe. It's great for a crock pot.

    Beef and Guinness Stew

    Ingredients
    • 2 pounds stewing beef
    • 3 tablespoons oil
    • 2 tablespoons flour
    • Salt and freshly ground black pepper
    • Pinch of cayenne
    • 2 large onions, coarsely chopped
    • 1 garlic clove, crushed
    • 2 tablespoons tomato puree, dissolved in 4 tablespoons water
    • 1 1/4 cups Guinness
    • 2 cups largely diced carrots
    • Sprig of fresh thyme
    • Chopped parsley, for garnish
    Directions
    Trim the meat of any fat or gristle, and cut into 2-inch cubes. Toss beef with 1 tablespoon of the oil. In a small bowl, season the flour with salt, pepper and cayenne. Toss meat with seasoned flour. Heat remaining 2 tablespoons oil in a large skillet over high heat. Brown the meat on all sides. Reduce the heat, add the onions, crushed garlic and tomato puree to the skillet, cover, and cook gently for 5 minutes. Transfer the contents of the skillet to a casserole and pour half of the Guinness into the skillet. Bring Guinness to a boil and stir to dissolve the caramelized meat juices on the pan. Pour over the meat, along with the remaining Guinness. Add the carrots and thyme. Stir and adjust seasonings. Cover the casserole and simmer over low heat, or in a 300 degree F oven until the meat is tender, 2 to 3 hours. Garnish the beef with parsley and serve.

    I don't have the recipe, but my SO makes a mean vegan chili. It involves Yves ground round, a good brand of black bean soup, and cocoa. Much of the other ingredients are pretty standard.

    It's good hot or cold. And with tortilla chips. And served over baked spaghetti squash.

    I've been meaning to use the crockpot more for making lunch stuff. I have one of those huge 1,001 recipe cookbooks. I hope this thread will inspire me. Though, I'm going vegan with my recipes.
     
  9. I've seen you mention this chili a couple of times...I'd love to try it. I'm still a somewhat novice cook so measurements help me considerably if you can persuade your SO to give you this info.

    I'm definitely trying jazz's beef stroganoff and cyn's stew. They sound right up hubby's and son's alley.
