Food Post Holiday sandwiches

    I just made me two little honey baked ham sliders out of the leftovers... :)

    seared the ham slices in a skillet.
    sliced in half and toasted the small potato bread rolls in the same skillet.
    sliced ham to fit the bread.
    ate the sandwiches.

    I should have take a picture of them they were so cute.

    Very nice.
    We have a bunch of sliced turkey. I like it jazzed up in a sandwich by adding bacon or cole slaw right on the sandwich.

    My favourite is very simple.

    Two slices of toasted bread.
    Some warmed, left over Turkey
    A little bit of stuffing/dressing.
    A little bit of mayonaise
    Salt and Pepper.

    If you are feeling adventurous, toss in some cranberries.

    I had some of these a few weeks ago when I made my gravy (I roasted a small turkey to make gravy in advance).

    These all sound good. We don't have Thanksgiving, but I can taste them

    However, I don't understand the "bacon OR coleslaw" bit. Why not both? On toasted bread?

    I don't eat bread, but I've been cutting slices off of the turkey breast, slapping on a slice of gouda and melting it in the oven. Once it gets pulled out I'll top it with a dollop of my homemade cranberry sauce. Amazing quick leftover fix.

    My inlaws made the turkey so dry that it was unusable in a sandwich even slathered with tons of gravy and cranberry sauce. Made me very sad.

    Ever since I was little, the day after Thanksgiving and Christmas involved turkey sandwiches made thus:
    2 slices white bread toast. Mayo on one, Cranberry on the other, turkey on the mayo, stuffing on the cranberry. Slap em together. Voila. Serve cold. My kids make these now.
    Another leftover turkey thing: Hot Brown: 2 or 4 slices white toast. Sliced turkey on them, stuffing in the middle. Slather on the gravy. Nuke to warmness. Enjoy.
    One I make for myself: French bread, sliced apple, leftover turkey (and ham if I have it, leftover or not), mayo, bacon, swiss cheese.

    My mom always made stews (in addition to sandwiches). If I'd had extra turkey this year, I would have made soup with it. Specifically, soup with chickpeas, spinach/kale, and a bunch of other veggies.
