    I prefer them in a quiche, omelette, or a frittata.

    A fried egg sandwich with spinach and cheese on wheat toast can be divine.

    But if I'm just eating an egg straight, give me it scrambled, please.

    I like over easy, which means the yolks runny and the whites only barely firm. Although the crispy edges are OK, I'd rather have the whites a little too runny than the yolks too firm.
    Omelet or scrambled is also OK (I like eggs:)) as long as they're soft and wet. Or huevos rancheros with beans and chorizo or PGC but again not overdone. I hate overdone eggs with hard yolks, although that's OK in egg salad or deviled eggs.

    Sunny side up is my first (with a bread to soak the runny :))
    Scrambled is my second (with cheese please...and ketchup)
    Omelet is a nice treat (with everything in it...extra cheese)

    I've been getting more into hard boiled these days

    I do love a good egg salad, with a little dijon mustard in it.
    So I'll go with boiled. But they're not always available if you haven't planned ahead.
    In that case, then I'm going with Cyn.

    I love eggs. I'll eat them pretty much however you want to serve them (except egg salad...blech.)

    If I'm making them at home, I usually go sunny side up, but I'll put a cover over the pan to firm the yolk a little more. If I'm at Cracker Barrel, eggs in a basket is my jam. Just about anywhere else, I'll either do soft scrambled with cheese & ketchup, or over easy/medium, with toast to soak up the yolk. Every now and then, I go on a boiled egg kick...hard-boiled, usually, with just a little butter, and a little pepper.



    ....now I want eggs.

    This week has been all about the hard-boiled eggs. I usually do more a medium yolk than a really hard yolk--my goal is a center that is firm yet silky, with a texture similar to fondant. I'm usually pretty spot on with my technique: bring water to a boil, add eggs, cook for six minutes at a boil just shy of a rolling boil. Depending on your stove, it might take seven minutes. Then shock them in ice water. Voila. Perfect medium-boiled eggs.
