What to do with leftover salmon?

This thread is in response to a specific request.

I have leftover grilled salmon from last night and want to do something interesting with it. Got any recipes or ideas?

Try making a Swiss cheese Quiche with the salmon in it, or Salmon Chowder- same recipe as New England Clam Chowder, only using the Salmon.

Break the salmon into small chunks and place atop a ceaser salad and bring it to my house. Sounds interesting to me. LOL

My mom use to make salmon cakes. She would mix the salmon with onions, bread crumbs, and some other stuff, then fry them up. Yum.

just cook some tagliatelli with it. the salmon can even be cold.

No fuss, just toss it in the boiling water and 6-7 minutes later take it out. If you want you can make some sauce with it too. Hell, get yourself a glass of white wine and you have something to enjoy

i think cold grilled salmon makes a great spin on a salad nicoise, classically the recipe calls for tuna canned in oil.

boil new red potatoes, in the last couple of minutes of boiling, throw in some fresh green beans to just blanch them, drain and then stop them with cold water or plunge them into an ice bath.

the classic dish uses boston lettuce, but i think you can use whatever mix of greens suits you. arrange the greens on a large serving platter, put the potatoes and green beens on top. Other components of the salad are tomatoes and hard boiled eggs, sliced or diced to your preference. Scatter minced fresh parsley, cracked black pepper and salt and drizzle with oil and vinegar or a vinegrette.

last step is to flake the salmon in large chunks on top of the salad.
