My God Damn tomato sauce recipe

Well, this may seem pretty basic - but it tasted pretty good actually

a little olive oil in a saucepan, heat it up
add 3 god damn pieces (are they called cloves?) of garlic, all cut up and crush
add 500 grammes of passata (or like a tins worth to Americans)
the heat is low, so as not to boil this shit
add the grated skin of a lemon
add 2 bay leaves
add about 1.5 seconds medium shaking of the basil (like half a teaspoon or so)

Cook on a low heat for about 30 mins

Then pour it straight over your pasta, and grate some god damn cheese over it.

I surprised myself, it was really good, and the sharpness of the tomato mellowed out with the garlic and the herbs and so on.

Sounds good. I use Mario Batali's recipe, which is pretty similar:

Basic tomato sauce

It's pretty good. The carrot and caramelizing the onions balances the acidity of the tomatoes nicely. I usually pop it in the blender before putting it in cans, since the kid's don't like chunks.

I added some mushrooms to it tonight and it was even better!

I dont cook much, so these simple things are pleasing to me

Strange Famous ... your unknown man was a war-time Fireman telling fellow fireman Henry Green (an English novelist) what the senior butler in a country mansion had told him that the Lord of the Manor liked best in life. It's a delightful summary of how the other half lives - and their common humanity (perhaps). It was "re-cycled" by Hanif Kureshi (or was that "nicked").
The same interview carries the observation by Green that "...we don't write letters now, we telephone. And one of these days we are going to have TV sets which lonely people can talk to and get answers back. Then no one will read anymore."
The interview is dated 1958.
