any ideas for cooked chicken meat?

i just boiled a chicken, now i have a chicken's worth of chicken meat.

other than just eating it, or chicken salad.....


what can i do with it.

what would you do with a bunch of cooked chicken meat?

quesadillas

Get some tortillas. Fill with chicken, cheese, jalapenos, whatever else. Heat them up and dip in sour cream and / or guacamole.

Chicken stroganoff, chicken stew, chicken caesar salad, chicken alfredo, chicken on a bun, etc, etc.

Pick a dish. Add chicken.

Done.

I recommend grinding it up, mixing it 50/50 with 3-color couscous and herbs, and making some tasty burgers.

I did something similar last weekend and it was a big hit.

yup. what woods said. fresh avocado, onion, black beans, tortillas, tomatoes...

shred and add to a slice of toast topped with spinach leaves, then chicken, then onions, diced tomatoes, and a full-sandwich sized slice of cheese with black pepper, garlic powder and kosher salt. broil until crispy browned.

actually, i'd toss it on a salad with diced tomatoes, greek feta dressing, mixed greens, shredded carrots, alfalfa sprouts, sunflower seeds, chopped onion, diced cucumber and celery, oregano, minced serrano pepper and a little extra feta.

Chicken enchiladas, man.

Corn tortillas, enchilada sauce, chicken, cheese, and pretty much whatever else you want...

Easy to make.

You could always dress the chicken up in a little baby outfit, take it out in public, and start screaming, "HELP! SOMETHING'S WRONG WITH MY BABY!"

Anything with rice. Make white rice, then add veg and chicken to it.

Did you keep the water you boiled it in? You can take that and add vegetables along with some spices and make soup. Boil rice in it and you have chicken and rice soup. Add veg and noodles and you have homemade chicken noodle soup.

Take some of it and freeze it in zip lock bags. Save some for later.

Pizza, alfredo sauce, chicken and frozen pizza dough. Nice white pizza. You could even do peppers, onions, garlic, and chicken with spicy/southwestern seasoning.

I know you said chicken salad, but I love chicken salad and had to say it again. Put nuts and grapes in it, gives it a great flavor.

Bun + BBQ sauce + Chicken = easy goodness

So many things you could do with it.

When I have some cooked chicken, I will usually throw it in a pasta sauce. Sautée some mushrooms, courgette and the chicken in butter and garlic then add a little cream, some parmesan, fresh parsley, salt and pepper to taste. Toss with pasta of your choice.

You can make chicken pies, if you have stock to go with the cooked meat. Reduce the stock and add a little corn flour, butter and seasoning to make a base for the chicken to sit in. Line some individual pie cases with puff pastry and fill with the chicken and sauce. Cover with a pastry lid, brush with butter and place in the oven until the pastry is golden.

A very plain option but that tastes great is to sautée the cooked chicken in just a little butter and garlic and serve with basmati rice. It tastes crispy, moist and garlicky all in one. This is kind of a childhood memory food for me. My mom would make chicken soup and then feed me the chicken this way. Yum.

How about chicken salad? Just toss the chicken with some salad ingredients - a couple of different kinds of lettuce, some cold boiled peas and minced carrots and potatoes, some olives, a little mayo. Done!

thanks, lots of great ideas. i already took the meat off the bone, so dressing it up and taking it around town with me is not an option. if it were an option, i would have probably made a sign about it.

i like the sautee in butter and garlic and serve with rice idea. i like most of the ideas, so thanks.

please, if anyone has more ideas on what to do with cooked chicken meat, post em.

simmer with some of the broth, rice, carrots, celery, canned corn, garlic, oregano, thyme, Very Early Peas, pearl onions and add a little flour after the veggies are soft... chicken stew.

shred it, toss with some shredded mozzarella, scallions, garlic, herbs and spice, and stuff it in a hollowed out tomato and broil.

Corn tortillas are the only way!!! Far more flavorful. Goodness, why would anyone eat flour tortillas anyway? They have nearly no nutritional value.

I appreciate different tortillas for different things...

Generally, I also like corn tortillas more, though.

Chicken Orzo Frittata

3/4 cup orzo pasta
6 eggs
1/3 cup whole milk ricotta
1/4 cup creme fraiche
2 cooked chicken breasts, cubed (about 2 cups)
4 scallions, chopped
1/4 cup chopped Italian flat-leaf parsley
1/3 cup diced roasted red bell peppers
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
Directions
Preheat the oven to 375 degrees F.

Bring a small pot of salted water to a boil over high heat. Add the orzo and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta.

In a large bowl combine the eggs, ricotta, and creme fraiche and stir until the eggs are beaten and the ingredients are combined. Add the cooked orzo, chicken, scallions, parsley, red bell peppers, salt, and pepper. Stir to combine.

Pour the mixture into a 1 1/2-quart baking dish. Bake for 25 minutes. Turn on the broiler. Place the pan under the broiler until golden on top, about 5 minutes. Remove from the oven and let set for 5 minutes. Cut into wedges and serve with a side salad.

We like topping the casserole with sliced mozzarella and either smoked paparika or chile powder while under the broiler.
