Recipe of the Day - September 1 (sesame rice salad)
Sesame Rice Salad
Ingredients 2 cups Jasmine Rice 2 garlic cloves, minced 1 tsp. salt 2 tbsp. vegetable oil 5 tbsp. toasted sesame oil 4 tbsp. rice vinegar 4 tbsp. soy sauce 1 tsp. minced fresh ginger 1 1/2 cups fresh sugar snap peas or snow peas, blanched 1 medium red onion, minced (about 1 cup) 1/2 cup sliced water chestnuts 1 medium red bell pepper, cored, seeded & diced 2 tbsp. toasted sesame seeds (optional) Salt & pepper to taste Preparation Cook rice as directed with the addition of garlic & salt. Set aside. To prepare the dressing, mix the vegetable oil, sesame oil, rice vinegar, soy sauce and ginger in a bowl. Toss together in another bowl the peas, onion, water chestnuts and red pepper, then add to the warm rice along with the dressing and the sesame seeds, if desired. Toss thoroughly, taste, and adjust seasonings. Serve lukewarm or refrigerate until 30 minutes before serving. |
