Hey hun,
I read your distress post and decided to check up on my own recipe book. Its really sweet of you to support your mother 100%..I couldnt say no to ya! I tried to look for something nutritiouse and delishious- and of course easy! I got this somewhere and it should take a few mins to make..I hope you like tuna! Tuna Casserole just estimate how much you would want for each item..add more or less ~2 1/2 c. macaroni noodles (or even bowshaped ones)-~ ~1 c. of frozen/fresh peas 1 can of mushroom soup(not condensed) ~2-3cans of tuna-drained ~1/2 -1 c. onions -chopped into ~ 1cm squares Cheese (any kind and as much as youd like) salt and pepper to taste Boil and cook macaroni until desired tenderness. Drain and place in a pan. Add tuna, peas(if frozen its ok to put in, cause it will cook), onions, and salt/pepper. Mix all together and add the cheese for topping. Bake at 350° until cheese is golden and bubbling a bit. Play with this recipe..if you want to add something else go ahead and try different things..until you find the recipe that you like! Hate to but in ...........but, did you know that that recipe vaulted
campbells soup into the history books in the early 1950's? The decade of casseroles!! Love tuna noodle to this day!

No kidding? My mom got me a few recipe books when i went off to college..I made homemade pies(including the crust) and I did pretty good for my first real difficult pastry..no including cakes. I definetly suggest getting a cookbook, but make sure its for easy, healthy, and fast recipes. You didnt tell me how the casserole went for ya..Well heres another for you! Though Im not sure where i got it...Its a DOOZY!
Sheppherds Pie ~2lbs of ground beef 2 med. onions,diced ~1 can of corn (whole kernels) ~4 c. of mashed potatoes( please tell me you know how to make it-to your tastes w pepper/salt any other prefered ingredients) Fry meat. Add onions and corn-mix all together. Put in a square pan to accomodate ingredients. Add mashed potatoes on top. Bake in oven for ~20-25 mins @ 350°. Good luck! |

MMMmmm that sheppherds pie sounds really good, im def trying that one veryyy soon and don't worry I know how to make mashed potatoes... i'm Irish they are a staple in my house hehe

Mmmm~Mashderpaders are one of my fave sidedishes~I like just a bit of garlic for taste in mine..mmm. Im glad it worked out for you! As you know those two recipes are approximate measurements, i made them up as i wrote them down in the thread. So, to your tastes and approximate what you want.
OH forgot to tell u! If you want to make the sheppherds pie a little less fattening, after you fry the meat, drain out the oil from the pan, without loosing the meat! you can use a strainer, with small holes if you want. It should also make the sheppherds pie less liquidy after you bake it, but its extra sauce for me..Tell me how it turns out! |

I don't know what kind of time you have to prepare, but I have a couple of easy recipies:
lemon chicken (not the kind in a Chinese restaurant) chicken breasts 2-3 lemons salt pepper butter melt butter in pan. Slice chicken into strips. Fry chicken in butter gently (so you don't burn the butter) until it takes on a nice brown colour. Roll the lemons on the counter to break all of the little sacs inside. You'll feel it get softer when it's ready. Slice them in half and squeeze the juice into the pan. Please don't use that bottled crap. It's so full of chemicals that you can't taste the lemon. Season with the salt and pepper, and cook on medium heat until the lemon juice reduces to a nice sauce. I like this on rice or pasta. Do you like Asian curries? You can find S&B brand Japanese curry in a lot of grocery stores now. It's super simple to make. Many stores also carry the Taste of Thai curries, which are only mildly harder. Watch out if you're sensitive to capsicum, though. Try the fresh pastas--digornio, buitoni, etc. have packages of fresh filled and unfilled pasta that's really great. If you have time on the weekend, consider cooking a small leg of lamb... I get mine at the local warehouse store. It's about $11 and it feeds two big eaters for 3 days. First we eat about half of it roasted and sliced, then we grind the rest up and make shepherd's pies. It's really not hard if you have the time to roast the meat. I use garlic, salt, pepper, and fresh rosemary. Our recipe is really simple--grind up lamb, put it in a bought pie shell, make mashed potatoes and spread them on top. Bake at 350 F until the potatoes and crust are brown and yummy. Cooking is an art that evolves with the cook. You will gain confidence as you gain experience. You will start to know what goes with what. You will become sensitive to the sounds and smells of finished food. have fun. ps. I apologise if I've overestimated your skill. Here are a few quick, easy (and not too expensive) recipes you can try out! Have fun!
Easy Beef Stroganoff 1 lb round or flank steak 2/3 cup water 1 small can sliced mushrooms 1 envelope onion soup mix 1 cup sour cream 2 tbsp flour cooked egg noodles Cut meat into 1/4 - 1/2 inch strips and brown meat quickly in a few tbsp of heated oil. Add the water, mushrooms (including the liquid) and soup mix. Heat just to boiling. Blend sour cream and flour and add to meat mixture. Cook and stir until mixture thickens. Serve over hot noodles. Easy Taco Casserole 1 lb ground beef 1 cup salsa 1/2 cup mayonnaise 2 tsp chili powder 2 cups crushed tortilla chips 1 cup shredded Colby or Monterey Jack cheese 1 cup shredded cheddar cheese 1 tomato, chopped 2 cups shredded lettuce In a saucepan, brown ground beef and drain off fat. Add salsa, mayo and chili powder; mix well. In an ungreased 2 quart baking dish, layer half the meat mixture, chips and cheeses. Repeat the layers. Bake, uncovered, at 350 degrees for 20 - 25 minutes. Just before serving, top with lettuce and tomatoes.
