Singapore Chili Crab


I'm going to miss this event. It's a shame because Singapore Chili Crabs are really yummy.

Singapore Chili Crab Recipe:

3/4 cup chicken broth
1/2 cup ketchup
2 tablespoons soy sauce
1 tablespoon chili garlicsauce
1 tablespoon rice vinegar
1 tablespoon sugar
Sliced green onion 21 live blue crab
tablespoons cooking oil
2 tablespoons minced garlic
1 tablespoon minced ginger
1 red jalapeno chili
seeded & minced
1 egg, lightly beaten

Mix sauce ingredients in a small bowl and set aside. In a pot of boiling water, parboil crab for 2 minutes. Drain, rinse with cold water, and drain again. Pull off the top shell in one piece and reserve for garnish. Remove and discard the gills and spongy parts under the shell. Twist off the claws and legs; crack them with a cleaver or mallet. Cut the body into 4 pieces. Place a wok over high heat until hot. Add oil, swirling to coat sides. Add garlic, ginger, and chili; cook, stirring, for 1 minute. Add crab and stir-fry for 2 minutes. Add sauce and reduce heat to low; cover and simmer, stirring once or twice, until crab is cooked, 6 to 7 minutes. Stir in egg and cook just until it begins to set, about 1 minute. Arrange crab and top shell on a serving plate. Pour sauce over all and garnish with green onion.

hmmm...interesting. The crab sounds awesome, maybe ill try to go there. Definitely seems better than most of the street fairs in NY.

Can someone locate an actual brand name for the chiligarlicsauce? I've been curious as to which brand is actually used.

good question. Brands do make a difference for flavors.

mmmmm... I love Chili Crabs... Pepper Crabs too...

I just found out I probably won't be making my annual trip to Singapore this year... so I may have to use this recipe to have some at home.

the crab thing was two weeks ago -- so meadowlands it is - -mmmmm may have to wander over there myself...

If you live in a town with a large Asian market area, try to find ABC Tropical Chilli Sauce and substitute for the ketchup. Warning, this will make the dish hot hot hot.

And, don't worry if you don't feel like hassling with crab. Make the sauce and use with shrimp, veggie or fake shrimp, or tilapia morsels. Tilapia works really well (my wife is allergic to shrimp).
