Recipe of the Day - May 19 (zucchini bread)
 

Zucchini Bread

Ingredients
2 eggs
2-3 tsp. cinnamon
3 tsp. vanilla
1 cup oil
2 cups grated zucchini
2 tsp. baking soda
2 1/3 cup flour
1 tsp. salt
1 3/4 cup sugar

Preparation
Combine all ingredients in a bowl.

Bake in 2 ungreased loaf pans.

Bake in oven at 350 degrees for 60 minutes or until knife comes out clean.
