I don't think that working your legs will give you a big ass as opposed to just a well toned one, but if while doing the leg press exercise you don't allow your legs to come too close into your chest (on the negative movement) then I don't think it will work your glutes as much. However, many exercises for your quads will also work your glutes, and if you don't do an exercise through it's full range of motion because you're afraid of getting a big ass, you also won't be working your quads to the best of their ability.

Any hip extension uses the glutes. It is unavoidable. So don't worry about it. Besides, you need the muscles to work together. Doing a bastardized routine of only leg curls and leg extensions will eventually lead to little real-world strength gains and will potentially wreck your knees. If your butt is too big, lose some weight.

Big legs can come with a small(er) ass by doing front squats. Puts more emphasis on the quads than anything. Do both front and rear squats with a moderately heavy weight and you will notice how much of a difference there is in regards to your glutes being used in each excercise.
Plus I found in my experience after using front squats for a month or two my rear squat increased quite considerably. My penny or two!

Your genetics will determine if you are going to have a big ass. Mine's damnably large, but it's large, muscular, no matter what I do with my legs. It was large when my main exercise for legs was walking. Even before I got the extra adipose about the middle....
Go ahead and do leg presses and squats, some folks appreciate a nice round ass, be proud
