Can anyone recommend a good program for recording Audio Streams?

Any help would be grately appreciated.

I use Audiotools for all of my work, but it does $20 to register to remove the 10 minute recording limit. Was $25 when I registered 2+ years back if memory serves

and are you needing a program just for windows or linux (or even a Macintosh for that matter), or is cross platform availability a "must have" thing?
