I'm running a matrox dual output card on two monitors. I go it on a recommendation from a friend who also uses one, and it is satisfactory to pretty fricking nifty, but I might shop around a little more before I buy another and see if I can get a couple of other features.

I run dual monitors on my system - I have a GeForce4 with several outputs (VGA, DVI, and SVideo). I bought a DVI->VGA dongle, hooked it to the DVI port, and hooked two VGA monitors to my video card.
I then grabbed an app called Ultramon (google for it) and it set things up quite nicely. Alternately, you can drop multiple video cards into your computer (assuming you have the free PCI slots) and do the same.
