    Mmmm Spam.

    A few weeks ago, we were tailgating, and there is a group of Hawaiian folks that tailgates next to us. One of my buddies is from Maui, so they always check in on each other. The patriarch of their group came over and offered us Spam breakfast sandwiches, and I declined, not wanting to eat any more (I'd already had two danish), and he misinterpreted it as me not wanting Spam, so he came back with a sausage one instead. My friend and I ended up swapping so I could have the Spam

    It was so good, I had another bowl with 2 more fried eggs. The photo came from the 2nd bowl because I forgot to take a photo of the first.

    Three minute, ghee-fried Over medium, over rice with browned crumbled sausage or cubed browned ham, topped with a TJ's goat cheese slice, garlic powder, scallions, and sea salt. Sprinkled with a little black and white furikake. Sometimes some coconut aminos, but not usually.

    I have an aunt, now retired, that worked for Hormel at the Austin, MN Spam plant. They even have a Spam Museum there.

    I voted for everything except "only whites". I think the yellow is much of the flavour of an egg.

    The burger reference instantly made me think of the taste of sandwiches with fried eggs, cheese, mustard and black pepper which my dad would make while we were visiting various national parks along the US west coast. It was exciting camping out with a tent with wild animals around. At the campsites people would sometimes wake up at night and form huge human lines, shouting and drumming with kettles to scare off bears. Any time something scratched the thin tent cloth you knew that it could well be a wolf, an elk or moose.

    I'm learning that 5 minute instant pot eggs are over cooked. Today, I'm going to try 4 minutes. And, we got these silicone egg rings from Sur la Table and they're fun!

    Several ways.

    The usual is fried, in the grease left from frying the bacon. Sunny side up. Whites firm, but not rubbery. Yolks runny.
    If done properly, usually in a cast iron skillet, I can handle the whites being a bit crispy as long as they're not overcooked (a bit tricky).

    Scrambled are OK, moist not dry. I really like to smother them in milk/cream gravy.

    Omelet, with plenty of fresh veggies sautéed al dente. Cheddar cheese is a plus. Ham is a plus but not necessary.

    Hard boiled are OK for a quick breakfast, or maybe one to help "fill out" a light breakfast like a bagel. With a little mayo, salt, & pepper on the plate for dripping.

    Eggs are a beautiful thing. I simply can't choose which way I prefer as it changes with my moods. Some thoughts:

    1) I had an excellent onsen egg on avocado toast the other day. The yolk was perfectly spreadable, just like butter.
    2) Scrambled eggs - Ramsay's recipe (see below) makes the richest scrambled eggs - only way I make them now
    3) Omelettes - especially where the outside is firm but the insides are barely set
    4) Eggs Benedict - so many variations, but with the perfectly poached egg, a classic
    5) Soft boiled - salt, pepper, and toast for dipping
    6) Egg Salad (or as they call it in this part of the world, Egg May0) - when it's done right, it's one of my favourite simple sandwiches
    7) Fried eggs are best served on excellent fried rice with with nasi lemak - when done well it heavenly
    8) Hard boiled - I make a warm potato salad that includes adding some sliced hard boiled eggs... when cooked properly, with no grey on the yolk and with a firm but not over cooked yolk... OMG.

    Just some of my favourite ways to eat eggs.
