    SUN BASKET update..on our 13th meal...3 per week and loving it...( one not so good meal but we misread instructions!) cuts down on shopping time, wasted food and gets us both involved with cooking and "Dinner Time"...xoxoxoo

    Baked flounder with parmesan crumb and baked butternut squash. Parmesan crumb crust didn't come out like it was supposed to, not sure if it's because I had to try to downscale the recipe or if it's because of using frozen rather than fresh filets of flounder. I think it's more the latter, the extra moisture likely led to the breadcrumb/oil-butter/parmesan mix getting soggy rather than crisping up.

    Still tasty though, and I think I can use more cheese and much less oil than the original recipe to make it work.

    I bought a 3 pack of pizza crusts and we made pizza. It was sausage, onion, tomatoes, and of course cheese. It was good.

    Beef stew (actually more like carrot, potato, beef, & onion stew), cornbread*, dessert was apple pie* & ice cream.

    * From scratch thanks to mostly my wife.

    Beef roast, slow cooked in the crock pot.
    Spaghetti squash and spinach casserole.
    Steamed broccoli.
    Peach cobbler, homemade, with coffee ice cream.
