Food What's For Dinner Tonight?

    Ah, yes. My new keyboard's autocorrect is not learning predictions well. :/ I BRINED the thick cut, boneless chops for an hour in salt water with bay leaves, cracked pepper and a few whole alspice that I cracked with my pestle. Rinsed, rubbed 'em with evoo, pink sea salt, cracked pepper and garlic powder. Seared the fat strip first for 2m, then seared on one side for 3m, flipped them, covered with thin sliced apples and tossed in the 400* oven until they hit 135*. Rest for 10.
    I use The Kitchn's perfect pork chop recipe. Spot on every time.

    Slow Cooker Red Wine Beef Stew
    * 2.5 cubed stewing beef
    * 1/3C flour
    * Minced Garlic, 1-3 cloves
    * Large Onion, Sliced
    * 1tsp, Season Salt or Spice Rub (heaping)
    * 2C Red Wine
    * Bag of Frozen Veg (Mix or Cali Blend)

    1. Place beef in slow cooker
    2. Cover with Flour and Spices
    3. Stir until beef until coated
    4. Tossed in Onions and Garlic
    5. Pour in wine
    6. Cover and cook on low overnight
    7. Toss in veggies in the morning
    8. Cook for another 1-2 hrs before serving over rice
    Note: Stir and season to taste before adding veg

    In getting ready to go on a road trip on Friday I coarsle chopped all the veggies in the fridge that I new would be no good by the time we got back home. The better part of a stalk of celery, 3 poblano peppers, one sweet red pepper, on green bell pepper, a medium red onion, half a dozen jalapenos and serranos, about half a garlic head, half a bunch of mustard greens, put it all in a Dutch over, drizzled a little olive oil over all and topped it with some leftover roast beef and three Italian sausages. Tossed on some cumin seed, coriander, and a couple spriggs of rosemary.
    Put it in a 290 degree oven and went shopping. Three hours later it was really good. Veggies maybe a little overcooked, and quite spicy.:p I figured I had nothing to lose. Otherwise it would have (except for the sausage) just gone out with the garbage.

    Last night was a very boring British meal:

    Fish, chips, & peas.

    The good: The beer battered cod is OK, and we bake it (fried it would be way too greasy). The chips/fries were fresh potatoes cut into thick strips & wedges with the skin on.

    Chicken, vegetable, & noodle soup (from scratch), with garlic bread.

    As usual we use the juice rendered from the chicken to make the broth. And we take it easy on the noodles.

    Dark meat and spicy. (No pun intended...)
    Mashed potatoes and gravy
    Green beans with bits of bacon

    I've been having a craving since watching "Little Nicky" yesterday
    Had it in the background while working
    If you've seen the movie, you'd get the reference

    I just made some simple pasta. Made a nice meat ragu. Added dry pasta and cooked on low until done. Not amazing, but good.

    Biscuits and garlic butter

    Dinner was Ballyshannon (sp) sharp white cheddar cheese with buttered (real butter) water crackers.

    I love a good pork roast. My ex mother-in-law made an awesome pork roast seasoned with caraway and cooked with apples and celery and served with turnips, rye bread, and red wine.
